My friend Susu has a blog dedicated to food and restaurant reviews called Crock Pot Tuesdays, so when I was looking for a new recipe to try out, I knew I’d find something good on it that probably involved a crockpot! Turns out her dad has a great taco recipe, so straight from Susu’s blog I bring you…
Mr. Kassel’s Crockpot Mexican Chicken
- 2 frozen skinless chicken breasts
- 1 bag of frozen corn
- 1 can of black beans, washed and drained
- 1 large jar of salsa. You pick, mild, medium or hot
- Touch of cumin
Mix all ingredients, place in the crockpot and set your crockpot to low. Cook for 10 hours. Open crockpot, pull chicken apart and mix it all up. Serve on a tortilla with any other toppings.
Edits : My chicken wasn’t frozen and I didn’t have a large can of salsa, so I added a little water to be on the safe side. I also probably added ~ 1 1/2 tsp cumin.
Results : DELICIOUS! It was nice to have everything already mixed together so I didn’t also have to have an assortment of toppings out. Hunter added some hot sauce and sour cream to his and we both topped the tacos with cheese, avocado slices, and taco sauce.

Update: I made this again recently and it was just as delicious! If you don’t have all day to cook, then cook the chicken on high for 3.5 hours, shred & finish it mixed in the pot the last 30 minutes. I also added a dash of cayenne pepper for a lil heat.
