One of my favorite fall snacks is pumpkin bread and a big glass of milk. I’ll share a great recipe for pumpkin muffins later (thanks to Mrs. Massmann), but one of my favorite, easiest and cheapest recipes is actually Trader Joe’s pumpkin bread.
For $3, 2 eggs, some water and oil, your home / apartment can smell delicious and you can feast on a loaf of pumpkin bread. I made some the other morning for Courtney’s birthday and Hunter didn’t want to share it… until I promised that I’d drive a mile to Trader Joe’s and buy more mix. The other plus of pumpkin bread, it’s great for any meal. Oh and kitties (aka Cleo) might like a little nibble too….
If you’re feeling a little lazy, go pick up a box (or tell me to bring some back to Ga), sit outside and enjoy fall!
