This is a Peggy Elder classic — growing up, I was excited when I heard we would be having this casserole for dinner. Hunter loves having protein at every meal and I love some broccoli and cheese, so this is the perfect combination when we can’t thing of anything else to eat — plus it’s easy to make!
Creamy Chicken and Broccoli Casserole
Ingredients:
- 3 cups cooked chicken
- 1 – 1 1/2 cups cooked broccoli
- 1 can cream of chicken soup
- 1 cup cheddar cheese
- 1/4 tsp curry
- 1/2 tsp lemon juice
- 1/4 cup mayo
- 1 cup croutons
Grease 9 x 13″ dish. Mix soup, curry, lemon juice, and mayo in a bowl. Layer the chicken, cheese, broccoli, (a little more cheese) and top with soup mixture.After spreading the soup mixture, sprinkle croutons on top, bake at 350 for 30 minutes, and enjoy!
Best part: leftovers are easily microwaved the next day for lunch..
what kind of cheese do you use??
Might be helpful to say that, haha! I typically use cheddar, but have substituted other cheeses when I was low on cheddar.

@susu It’s so good. I love the crunchy of the croutons and then the broccoli, chicken and cheese all mixed together. Will be finishing my leftovers today for lunch!
