I starred this recipe when Lauren initially posted it because it looked both delicious and easy to make after work. Last week I finally made it and it was so good that Hunter asked me to make it again after the first bite! It made about 4 servings, so we had enough for leftovers at work. I’ll definitely be making this again!!
I’ve been waiting to try this recipe for a while. And, it was worth the wait… one pot, less than ten ingredients and done in less than 30 minutes. I loved it!

Sausage Tortellini Pasta in Creamy Tomato Sauce
- 1 lb Italian sausage
- 1/2 c. diced onion
- 20 oz. package Tortellini
- 28 oz can whole tomatoes, cut in the can with kitchen scissors
- 1 c. chicken broth
- Pinch of salt & pepper
- 2 Tbsp cream cheese
- 2 c. shredded cheddar cheeses
Cook the onion in a little olive oil until soft. Add sliced sausage and cook until browned. Add chicken broth, tortellini, tomatoes, salt and pepper. Bring to a boil, stirring often. Turn heat down to low, cover and simmer for about 15 minutes, or until pasta is cooked to al dente. Remove from heat and add cheeses, reserving a handful for topping. Cover and let stand for five…
