Sadly, this was the last year of our 4th of July fiesta at Erin’s house on IOP.  Over the years I have drastically improved the food / drink that I bring to the party, and this year was one of my favorites — homemade strawberry pie.  Pegs made this when we were growing up and I LOVED it, plus in the grand scheme of things, it’s not that bad for you – it’s loaded with fruit.  Another plus, it probably took 15 minutes to put together.

Strawberry Pie

Ingredients:

  • 2 1/2 C fresh strawberries (about 1 container of store bought strawberries)
  • 1 crust — vanilla or graham cracker
  • 1/2 C sugar
  • 1 3-oz package strawberry Jello
  • 1 T cornstarch
  • 1 C water

Slice strawberries in v-shapes and place in crust (crust should come in aluminum pan to hold it together).  Mix together the sugar, jello mix, and corn starch in a small bowl.

Put the water in a pot and bring it to a boil over medium heat.  When the water is boiling, pour it into the jello mixture and stir until it’s dissolved.  Once it is mixed together, pour it over the strawberries and place the pie in the refrigerator to chill until firm, at least 2 hours.  Mine chilled for a day and a half because of my schedule and company coming into town.

When you’re ready to eat, decorate it with a little whipped cream, or eat it plain.  Bonus: Stick a sparkler in it for some American flair!
