One Pot Lasagna
Ingredients:
- 2 T Olive oil
- 1 lb Sausage
- 1/2 Medium onion, diced
- 2 cloves of garlic, minced
- 28 oz can Diced (or crushed) tomato
- 8 oz can Tomato sauce
- 1 1/2 C Chicken broth
- 2 9 oz packages Buitoni four cheese ravioli
- 8 oz Fresh mozzarella cheese
- 1/2 C Parmesan cheese
- Parsley, for garnish
In a large pot, add the olive oil and turn on medium heat. Sauté the garlic and onions, until the onions are translucent. Add the sausage, and cook until completely cooked through, breaking it into smaller pieces. Once the sausage is browned, add the tomatoes, tomato sauce, chicken broth, and ravioli; stir well.
Bring the pot to a boil, then reduce heat and simmer over medium heat for ~15 minutes, until the ravioli is tender and the sauce has thickened. Then remove from heat, stir in the mozzarella and parmesan, garnish with parsley and serve!
Results: In Hunter’s words, “It was dericious!” It really did taste like a somewhat deconstructed lasagna. I accidently bought the “crushed” tomatoes instead of diced, but I think that worked out better since neither of us are huge fans of big tomatoes. I also forgot to buy the onion, so just sprinkled minced onion in there instead, and it seemed fine. The recipe made a lot of food, so next time I might half it, but we are both looking forward to leftovers for lunch tomorrow!
