Our December Supper Club kicked off with baked brie and marinated cheese with crackers as appetizers. The marinated cheese sounded familiar, and everyone pointed out that Natalie made it on her blog that we all follow (Note: We actually don’t know Natalie, but we all feel like we have gotten to know her through her posts and sometimes see her around Charleston). I couldn’t get enough of this appetizer, so I found the post with the recipe and wanted to share with you!
Marinated Cheese Appetizer
- 8oz Cheese cuts (mix of Cheddar and Vermont sharp white are best)
- 1/2 C Olive Oil
- 1/2 C White wine vinegar
- 4oz jar diced Pimento, drained
- 2 T Parsley, chopped
- 3 T Scallions, chopped
- 2 Cloves minced garlic
- 1 t sugar
- 1 t dried Italian seasoning
- Salt & pepper, to taste
- Triscuits
Arrange the cheese decoratively on a serving platter. Make sure to use a platter with a lip because you’ll be pouring the marinade over the top of the cheese. Mix the remaining ingredients in a bowl and really mix it well. Drizzle the marinade over the cheese and refrigerate at least 2 hours, but no more than 8 hours.
The famous “Sheri” who this recipe originally came from recommends using Triscuits because they absorb the marinade well. She also recommends serving at room temperature.
This is a perfect appetizer for parties, especially holiday parties!
