Back to work and back to our weekly routines.  I have to admit that I’ve been slacking with trying new recipes, and just cooking in general lately (I blame it on being busy at work and all the sports), but I found a recipe that had minimal ingredients and prep time, so was right up our alley for a week night meal.

4 Ingredient Meatball Sub Bake

  • 1 can Pillsbury Grands (5 pack)
  • 1 bag frozen meatballs
  • 2 C pasta sauce
  • 1 1/2 C mozzarella cheese

I recently discovered I love meatball subs (how have I not had these before?), so this seemed like a great week night meal to make after work.

Preheat your oven to 375 and grease a 9×13 pan.  Cut up the uncooked biscuits into eighths.  Place the biscuits in the pan and cover with the sauce — mix it up so the biscuits are all covered.  You can do this in a separate bowl, but then you’d have to clean more dishes.. so I went this route for less dishes to clean.

Place meatballs on top of the biscuits and then top with the cheese.  I used a mix of mozzarella and 5 cheese Italian blend (because it was what I had), and then sprinkled some Italian seasoning on top.  Bake at 375 for 30-40 minutes and serve!

Results: I was worried the meatballs wouldn’t be tender since they were frozen, but they turned out well and tasted good with the biscuit bottom, tomato sauce and cheese.  Definitely an easy meal I’ll be making again when I need something quick!
