In part two of our Supper Club recipes for this month, I give you the appetizer I made.  Lauren, Brittney, and I looked for fun St. Patrick’s Day meal ideas, and we thought this appetizer we found on Pinterest was the perfect way to start off our themed meal! Plus it added some fruit in the mix..  And if you need a last minute St. Patty’s day dish, this is just for you.

St. Patrick’s Day Fruit Rainbow

stpattys08Ingredients:

  • Strawberries, chopped
  • Tangerines
  • Pineapple, chopped
  • Green grapes
  • Blueberries
  • Red grapes
  • Mini marshmellows
  • Rolo candies (wrapped)

Cut up all the fruit, then arrange on a platter: Strawberries on the outside, then tangerines, pineapple, green grapes, blueberries, and red grapes.  Put the mini marshmallows on one end of the rainbow as a cloud, and Rolos on the other for the pot ‘o gold!

Edits: Since I made this after work, I ended up using canned tangerines and pineapple to make the prep a little easier, but they were still tasty!  This was an easy appetizer to put together, especially if there’s any travel involved.

Results: The girls demolished the fruit tray, and considering how much fruit was on the plate, that was pretty impressive.  Even the marshmallows and Rolos were gone.  Everyone thought it was a funny start to the meal too, and got the group in the Irish spirit!
