This past week Brittney came over for a craft night (more to come later), but since she was coming over, and Hunter and I needed dinner, I decided it was the perfect opportunity to try out a new recipe I found on Pinterest.  Plus you can never go wrong with a crockpot meal..

Crockpot Honey Sesame Chicken

Ingredients:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 C honey
  • 1/2 C soy sauce
  • 1/4 C ketchup
  • 2 T vegetable oil
  • 1/4 t crushed red pepper flakes
  • 2 lbs boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • Sesame seeds & green onion, for garnish

Step one, pull out your faithful crockpot.  Season the chicken thighs with salt and pepper, and place them in the crockpot.

In a large bowl, combine the onion, garlic, honey, soy sauce, ketchup, vegetable oil and red pepper.  Add the mixture to the crockpot and gently stir it to cover the chicken. Cover your crockpot and cook on low heat for 3 1/2 hours.

After the chicken is cooked, remove it from the slow cooker, and shred the chicken.  Then return the shredded chicken to the crockpot, stir it into the juices, and cover for another 30 minutes.

Serve immediately, over some rice or in a lettuce wrap.  Garnish with green onions and sesame seeds, and enjoy with a glass of wine and some friends!

Results: This got a thumbs up from everyone! The sauce was juicer than I thought, but it was great.  After putting the chicken on the rice, we all spooned some extra sauce on top before topping with the sesame seeds and green onions.

Update: 6 years later and this is still in the dinner rotation. Little man loves it too!
