Maybe it was the banana bread for breakfast in Hilton Head, but I was in the mood to bake last Monday when I had the day off, and decided to go with this recipe from Natalie. A slice of this bread went perfect with a glass of milk, and catching up on the Game of Thrones finale.
Strawberry Banana Bread
Ingredients:
- 1 3/4 c all-purpose flour
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/2 c brown sugar
- 3 large over-ripe bananas (mashed)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup Greek yogurt
- 1 cup strawberries, sliced
Preheat your oven to 350 degrees. Mix the flour, making powder, baking soda, and sale in a large bowl. Then mix the brown sugar, bananas, eggs, vanilla extract, yogurt, and strawberries in another large bowl. Slowly mix the bowl of dry ingredients, into the bowl of wet ingredients, and stir well.
Pour the mixture into a greased 9×5″ loaf pan. Top with a few sliced strawberries, then bake at 350 degrees for ~60 minutes, or when the toothpick comes out clean and the top is lightly browned.
