To preface this: I’m not an asparagus girl. I like other greens, but asparagus isn’t my go-to when coming up with a side veggie to make; however, if you wrapped it in something meaty and delicious, I’m suddenly intrigued. When I made the foolproof pot roast on President’s Day, I opted to go for asparagus on the side, because I had prosciutto in the fridge.
Prosciutto Wrapped Asparagus
Ingredients:
- Asparagus
- Pack of prosciutto
- Salt / pepper to taste
- Olive oil
Turn your oven to broil, and wait for it to preheat. Prep your asparagus by breaking off the ends — when you bend them they will naturally break — and discard the bottoms.
Put the asparagus on a baking sheet and drizzle olive oil on top, then season with salt and pepper (I’m in the habit of seasoning everything with salt and pepper, but you can totally skip this). Wrap a prosciutto slice around 3 asparagus spears in a downward spiral.
Place in the oven and broil for 3 minutes. Flip the asparagus over, and broil for another 3-4 minutes. Take them out of the oven, and serve immediately!
Results : Even with the prosciutto, I was kinda nervous that I wouldn’t like it because.. asparagus. I will totally change my opinion of the vegetable now, because I not only enjoyed it, but made it again the next day! The asparagus itself was cooked through and still a little crispy, and the prosciutto added some saltiness that I really liked.
I’m not quite to the point where I’ll just roast asparagus every night for dinner yet, but I’m totally down to add it to my ‘easy, last minute vegetable to add to dinner that I know both of us will eat’ rotation. Watch out brussels and broccoli!

I think I’ll just roast them at 400 for a few minutes and not bother turning them over. Do you really need salt with proscuitto?
Probably not. I think I’m just used to seasoning things whenever I add olive oil!
Add in Boursin garlic & chive cheese spread on the prosciutto before wrapping the asparagus for a little something extra ??so good, family favorite!
