Clearly I’m pretty lazy when it comes to making appetizers in the summer, and this is another “super easy to put together, yet the flavors taste great so you seem fancier than you might be” type of snack. We had something similar during cocktail hour at Gibbon’s wedding, and I loved how refreshing these lil guys tasted, so decided to recreate them for our Cricut Craft Night. The best part was when Brittney showed up with the same thing, ha!
Watermelon & Feta Skewers
Ingredients:
- Watermelon
- Feta cheese, in block form
- Toothpicks
Cut your watermelon and feta cheese into bit size pieces. Put 1 piece of feta cheese and 1 piece of watermelon on a toothpick. Throw all of your toothpick bites on a plate and serve!
Edits : Add basil or mint on the toothpick between the cheese & melon for another flavor, or drizzle some balsamic vinegar on top.
Results : These are ridiculously refreshing, and dare I say healthy? Plus if you bought a whole watermelon and are looking for a way to finish it off, these are a different twist!
I make a salad version of this with mint and then drizzle it with lime juice and olive oil and then top it off with some lime zest. My favorite summer side dish!
