I know I’m late to this ‘cauliflower in everything’ trend, but for some reason cauliflower was speaking to me the other day at the grocery store.  I’m pretty positive I’ve never made it before, and I only had it steamed with cheese growing up.  After buying it and reading some different cauliflower recipes (why are there so many?!) I decided to make my roasted version!

Parmesan Roasted Cauliflower

  • 1 heacauliflower-01d of cauliflower
  • 3 tbsp olive oil
  • Salt / pepper / Old Bay to taste
  • 1/4 C parmesan
  • 1/4 C bread crumbs

Preheat your oven to 350 degrees.  Cut the cauliflower into smaller, 1″ pieces and put in a bowl.  Add the olive oil, salt, pepper and Old Bay to the bowl and coat the cauliflower.  Spread the cauliflower on a baking sheet lined in aluminum foil and bake for ~30-35 minutes.

Mix the parmesan cheese and bread crumbs in a small bowl.  Take the cauliflower out and and sprinkle the cheese / bread crumbs on top of the cauliflower.  Put back in the oven and bake another 5-10 minutes, depending on how done you want it.  Take out, and serve!

Results: I was extremely surprised at how cooked through it was and flavorful!  I ate all my cauliflower before the rest of the meal finished cooking and we sat down to eat…  Now that I know how easy it is to make (not to mention delicious), I’m totally making this again as an easy side dish or snack!
