I haven’t baked in awhile and when I have it’s been breakfast food (muffins) or cakes, but I haven’t made cookies from scratch in long time.  I totally cheated a few times and make the “slice and bake” kind when I was craving them, but there’s nothing like real cookies made from scratch.  I decided to make the peanut butter cookies that we had growing up which was easy since I already had all of the ingredients in the pantry.

Peanut Butter Cookies

Ingredients:

  • 1/2 c shortening
  • 1/2 c peanut butter
  • 1/2 c sugar
  • 1/2 c brownsugar
  • 1 egg
  • 1 1/4 c flour
  • 3/4 t baking soda
  • 1/2 t baking powder
  • 1/4 t salt

Mix shortening, peanut butter, sugar, brown sugar and egg together in a bowl.  Blend in the flour, baking soda, baking powder and salt. Cover & chill the dough for at least 30 minutes.

Heat your oven to 375 degrees.  Roll dough into 1″ balls and place on a cookie sheet a few inches apart.  Use a fork to make a criss cross on the ball and flatten the dough some.

Bake for 10-12 minutes. Makes 3 dozen cookies.

These were some of my favorite cookies growing up and after making them again recently, they are still very high on that list.  Maybe they’ll show back up around Christmas time for Santa..
