Remember when I decided to make cookies for my neighbors before Christmas and put them in cute gift bags?  Well these molasses crinkles were the cookies that I suddenly started craving on my way home from work.  They’re kinda like a gingerbread, but with sugar on top, and remind me of my childhood.

Due to the amount of bags I wanted to fill for neighbors, I doubled the recipe and spent that Thursday night making 8 dozen cookies and bags to put them in! Told you I was a little crazy..

Molasses Crinkles

Ingredients:

  • 3/4 C shortening
  • 1 C brown sugar
  • 1 egg
  • 1/2 C molasses
  • 2 1/4 C flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • Sugar (for dipping dough balls)

Mix shortening, brown sugar, egg and molasses.  Mix the remaining ingredients in a separate bowl and then blend with others.  Chill dough for 2 hours.

Heat oven to 375 degrees.  Roll dough into 1″ balls and dip in sugar.  Bake 10-12 minutes.  Makes 4 dozen.

Edits : I found that baking these for exactly 10 minutes in my oven got them to the softness that I wanted – done around the edges, but overall a soft cookie.  I also roll the dough balls in sugar, not just a quick dip 😉

Results : I’m not waiting years to make these again.. I’ll probably make some more for all the football coming up because they were so good and we didn’t keep that many!
