After a quick warm stint, it has continued to be colddddd in Charleston. It took awhile for winter to arrive and now it won’t leave! Yall know that when I have a holiday off it tends to give me that extra time to actually make a homemade meal (this isn’t always normal with everything else going on in our lives), so I found a soup recipe that I hadn’t made yet, but had eaten at my mom’s and enjoyed. I was pleasantly surprised when it took a short time to put together, which gave me more time for projects!
Tortellini Soup
Ingredients:
- 42 oz chicken broth
- 20 oz package tortellini
- 1 can diced tomato
- 2 cloves garlic
- 1 tsp basil
- Green onion or spinach to taste
Put chicken broth in a large pot and bring to a boil. Add remaining ingredients. Simmer for 10 minutes then serve.
Results: In Hunter’s words: “This was tastier than I expected”. Considering how few ingredients are in it, the soup really is better than you might think and more filling. I was thinking I might be hungry later, but wasn’t. We had leftovers that were easy to warm up for work so a win-win and perfect for colder days!
