Since my sister doesn’t like chocolate, we had a lot of sweets without it and oatmeal cookies were a favorite dessert growing up. When oatmeal was added to my grocery list for my 21 day reset, I decided I wanted to make oatmeal cookies for my royal wedding brunch to add something sweet that wasn’t terribly unhealthy.
Oatmeal Cookies
Ingredients:
- 3/4 C shortening
- 1 C brown sugar, packed
- 1/2 C sugar
- 1 egg
- 1/4 C water
- 1 tsp vanilla
- 3 C Quaker oats
- 1 C flour
- 1 tsp salt
- 1/2 tsp soda
Preheat oven to 350 degress. Beat together shortening, sugars, egg, water and vanilla until creamy. Add combined remaining ingredients; mix well. Drop by rounded teaspoonfuls onto greased cookie sheet.
Bake at 350 for 12-15 minutes. For variety add chopped nuts, raisins, chocolate chips or coconut. Makes 5 dozen.
